AN AFTERNOON SNACK: Cheddar Cheese Buttermilk Cookies

Today I tried to make cookies. Are you a cheese lover like me? I got this delicious recipe for cheddar cheese buttermilk cookies from Jocooks. To be honest I'm not a kitchen pro, so I'm kind of struggling with making my cookies look aesthetically pleasing. Anyway  'don't judge a book by its cover', right? Well I guarantee you, the taste is amazing! It's easy and super cheesy, yummy!

Let's start with the ingredients:

- 1/2 cup Buttermilk - We want cold buttermik for this recipe, shake it before using
   ( HOW TO MAKE BUTTERMILK : 1 tablespoon lemon juice / white vinegar + 1 cup of fresh milk)
- 2 eggs - one to mix it in the buttermilk, and 1 beaten to brush the biscuit before putting it in the oven
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 teaspoon salt
- 12 tablespoon (approx. 176 gr) cold unsalted butter
- 1 cup cheddar cheese, shredded

How to make:

- Preheat your oven to 200C. Line a baking sheet
- whisk the buttermilk together with the cold egg in a small bowl. Put aside.
- In a large bowl add the flour, baking powder, salt and mix well.
- Using a pastry blender cut in the butter until mixture resemble coarse meal. Mix in the cheddar cheese. 
   Add the buttermilk mixture and with a wooden spoon mix everything together, then using  your hands
   quickly knead a few times until the dough barely starts to come together.
- Turn the dough onto a floured surface and continue kneading a few times. Add more flour as needed if the       dough is too wet.
- Roll out the dough so that it's about half an inch thick to 3/4 of an inch
- shape the cookie using a cookie cutter and place it onto the prepared baking sheet.
- Brush the cookie with the beaten egg and bake it for about 20 - 25 minutes.

This is a perfect snack to company your coffee or tea.
